Some experiences stay with you, not just for the result, but for everything that comes with them. Our participation in Foodish was one of those.
We were invited to take part in an episode dedicated to a true icon of Italian tradition: the pumpkin tortello. A theme we feel deeply connected to, as it brings together territory, memory, and endless possibilities for interpretation. Leading the challenge was Joe Bastianich, with special guest Chiara Maci, a thoughtful and authentic voice in contemporary food culture.
We presented our vision: a tortello that starts from tradition and moves through it with technique, balance, and constant research into ingredients. A dish designed to feel familiar, yet never predictable. Competing alongside us were other local realities: Ochina Bianca, Ristorante Giallozucca, and Osteria della Fragoletta. In a stimulating exchange of identities, approaches, and perspectives.
Our pumpkin tortello earned second place. A result we’re proud of, but more importantly, one that confirms the value of our daily work: care, respect, and experimentation.More than the podium, we take home an intense and enriching experience. An opportunity to connect, to tell our story, and to grow, pushing us to keep exploring while staying true to our idea of cuisine.
