Starters – first course
A fresh and elegant opening, where raw seafood tells the story of the sea with precision and lightness.
Red tuna ceviche.
Scallop carpaccio with elderflower, apple, brined lemon, and Assam pepper.
Marinated sturgeon carpaccio on a potato mille-feuille with wasabi mayonnaise.

Starters – second course
The temperature rises, the grill comes into play, and the journey gains depth.
Seared cuttlefish with pea cream, confit cherry tomatoes, and cuttlefish ink chips.
Char-grilled char, served both raw and cooked, with cauliflower and beurre blanc.
Radicchio salad with citrus gel and fried shrimp.

First course
Saffron rice al salto with charcoal-grilled prawns, parsley, and fish jus.
A dish meant to be broken, mixed, and shared at the center of the table.

Main course
Char-grilled tuna cheek with fennel salad, orange, and wakame seaweed.

Dessert
Rose cake with rose and vanilla ice cream.
